Crock-Pot Beef Stroganoff

When I first got married, a friend shared a similar recipe and since then hubby and I have adapted it to make it our own. It’s super yummy and though it may not look like much from the photo, it is a crowd pleaser for sure! This is a great recipe for a busy Fall day since there is essentially no preparation needed, and you get to come home to a warm, delicious meal! Who doesn’t love comfort food in the Fall? Try it this week, I promise you won’t be disappointed!

Ingredients:

1 lb stewing beef
1 (10.75 oz) can Cream of Mushroom soup, I use the heart healthy
1 (8 oz) container of mushrooms, sliced
½ a medium sweet onion, chopped
1/3 cup water
1 T Worcestershire sauce
½ block cream cheese (4 oz)

Procedure:

In your crock-pot, combine beef, soup, mushrooms, onion, water, and Worcestershire sauce. Cook on high for 5 hours or low for 8 hours.

Before serving, mix in cream cheese and cover for a few minutes until mixture warms through and cheese melts.

Enjoy over rice or pasta. (I prefer it over pasta, but rice is yummy too!)

Serves 4-6

  10. Great recipe - the cream cheese is an excellent substitute for sour cream in the slower and longer cooking process.
    I've been staring at this comment box, wrestling with whether to share my 3 secrets to AMAZING stroganoff. Isn't that silly?! I've gained so much from everyone sharing on the net, that it's time to give back, right?! I'll add them separately below, in case it's too long. Enjoy!

  11. 1. Add a Tablespoon of butter right before serving, when the heat is off. Stir well to combine. You'll see a beautiful glaze immediately, and the texture and richness to palate will greatly improve. Every sauce benefits from this, but especially a creamy beef sauce modified for a crockpot. You won't believe the difference this makes!

  12. 2. If you prefer not to use butter (the best option), a dollop of sour cream added to finish the sauce in the same way as butter is the next best option. Depending on how I like the texture, balance, and flavor of the sauce, sometimes I'll add both. The sour cream has a specific acidic flavor that adds a scrumptious layer of taste =)

  13. 3. OK, here's the real secret... (butter to glaze a sauce, or sour cream to sub / combine with it is common knowledge in culinary circles):
    Add a teaspoon to a tablespoon of instant coffee granules to the sauce.

    Yes, instant coffee! It makes the color deep and rich (add more if your sauce got anemic and too "beige"), and while you cannot identify the coffee flavor at all, the bold and savory taste emphasizes the beef flavors and brightens the whole dish.
